Background: Everyday it becomes more obvious that we can’t keep doing things in the same old way, innovation has become not a nice to have but the only way to stay in business and no where more so than where sustainability is concerned.  A perfect storm is brewing of raw material availability issues, raw material price instability, regulation and customer awareness of sustainability issues.  However, there is a bright future for those who act now, as growing use of sophisticated tools that allow a triple bottom line approach to product development means that experience is now available and as these considerations are also being used in the raw material sector, an expanding range of novel and sustainable ingredients are becoming available.
